A double IPA brewed especially for our Anniversary in January using 3 hop varieties in 3 ways to eke out every last bit of Central NY hop flavor and aroma. Sure to get you in a celebratory mood!
A collaboration with one of our favorite local bands--"Rabbit in the Rye." A Session Rye IPA, full of floral and spicy hop notes, brewed with NY State barley and rye. Like the band, a balance between rustic, earthy tones, and progressive flavor.

A rich robust porter brewed with black and chocolate malts. Aged in Bourbon barrels from Hillrock Estate Distillery in Ancram, NY--a distillery that grows & malts their own barley. Hillrock uses the "Solera" method which keeps bourbon in the barrel for over 7 years, infusing our Porter with delicious, smooth, small-batch bourbon flavor. 8.5% ABV
(2013) Inspired by local flavors & Belgian Brewing Tradition. Brewed with locally-grown herbs, NY State grown barley and wheat, and a Belgian yeast. A classic, dry, bready witbier with notes of fresh orange and chamomile. Why are we hypocrites, do you ask? Sweet orange peel and fresh orange zest. 4.5% ABV

An American Style IPA brewed with US hop varieties and a Belgian Trappist Yeast. At 85 IBUs and 8% ABV, this brew combines the flavorful fruity esters of a Belgian beer with in your face, super hoppy, all-American sensibility. Hoppy Summer! 8% ABV
Formerly, CNY Harvest Ale
A Wet Hop IPA brewed with fresh, local hops from our neighbor's farms and backyards less than 24 hours after harvest. Hop varieties used in this ale will vary from season to season, but the recipe and technique remains the same. In 2013, we used Nugget and Cascade hops. 6.5% ABV

An Imperial Chocolate Stout brewed with cocoa nibs to commemorate the day, in 1955, that a freight train carrying a load of chocolate derailed from the Ontario & Western Railroad in Hamilton just yards from our brewery. 10% ABV
A robust Porter amplified with roasted chicory root. Chicory flavor on the nose followed by a bitter chocolate finish imparted only by malt. *No actual chocolate or coffee! Lightly hopped for balance with local Perle hops. 5.8%
A deep, dark, full-bodied oatmeal stout as black as the winter's night sky. Brewed with locally grown, hand rolled oats and NY State barley & hops. Offered on Nitro or not!
An Imperial Irish style Red Ale with a hoppy twist. With our mission in mind: NY-grown barley, hard red winter wheat and local cascade Hops! These special Northeastern ingredients lend this beer unique flavor profiles. 8.2% ABV
THE WARM N' TOASTY
Our Winter Warmer: A Belgian Dark Strong Ale brewed with local honey and spices. Hints of cinnamon, honey and dark cherries blend with bananaand clove esters from a Belgian Trappist yeast. Sure to keep you warm n' toasty for the holidays! 8.5% ABV
